This Buckwheat Vegan Super Salad is Almost too Healthy..
INGREDIENTS:
- 40g cooked buckwheat
- Sliced raw veg: kale, shredded carrot, cherry tomatoes, grated broccoli, and red onion
- Cooked veg: baked Swede crisps (in EVOO, paprika, and salt), and roasted whole beets (incl leaves!) in balsamic vinegar and smoked salt @everyorganics thinly sliced
- Dressing: 15g tahini, 1 tbsp balsamic vinegar, 1 tbsp lemon juice, salt and pepper
- Baked tofu in adobo sauce and some EVOO @madewithplants
